Fall is here and that means boots, spiked apple cider and pumpkin pie. However, since eating pie every day
makes my husband judgmental isn’t healthy, this pumpkin smoothie is a nice alternative until more appropriate pie time. This delicious recipe makes two servings, one for today and one for tomorrow! It’s packed with vitamin A, potassium and fiber – making it eat like health food but taste like a milkshake. Yep, you’re welcome! Top each serving with some ground flaxseeds or nutmeg, if you fancy…
- 1 cup pumpkin purée (my Dad will be super disappointed if you use anything by Libby’s. It’s simply not done!)
- 1 large ripe banana
- 1 cup unsweetened soymilk or coconut milk beverage
- 1 tablespoon honey
- 1/2 teaspoon pure vanilla extract
- 1 1/4 teaspoon pumpkin pie spice
- 5 ice cubes
Now, these next couple steps are tricky. Smoosh everything together, blend, drink. Donezo.
Pumpkin is health food on fleek— rich in antioxidants, vitamins and minerals. For those joining us on our #RoadToFitness, pumpkin is also low in fat (huzzah!) and high in the critical disease-fighting nutrients alpha-carotene, beta-carotene, fiber, vitamins C and E, potassium, magnesium and pantothenic acid. Trust me, these are good things. You want some.
